Sauteed Onions and Green Beans – Gluten-Free

When green beans are abundant, fresh from local produce markets, I cook them often. Other times I use frozen green beans.



My family really likes the combination of onions and green beans. We’ve had them recently as a gluten-free side dish with a traditional dinner of meat and potatoes.



It’s just as good with chicken and rice. I’ve even enjoyed it as a side for spaghetti and meat sauce.

Salmon Croquettes, Gluten-Free

A childhood favorite that became one of my family’s favorites, my mom’s Salmon Croquettes were hard to leave behind when I first went gluten-free…they were so good that our kids would ask for them when she came to visit.

Parsley Pesto

The full-bodied, aromatic flavor of Italian parsley or single leaf parsley, which is also sometimes known as flat leaf parsley, combines with garlic, almonds, olive oil and Parmesan cheese to make this version of pesto.

It’s a good way to prepare a bumper crop of parsley so that you can keep it a little longer than a fresh-picked bunch would last in the refrigerator. Or maybe freeze it for a little later.

Tomatoes in Chive Vinaigrette

Fresh, ripe tomatoes, vine-ripened and fully sweet! …That’s when I mix up some vinaigrette, and adding a little chives with that is good.
