Gluten-Free Chicken Stew with Carrots and Celery

After a holiday week, some old standbys for a weeknight meal look interesting again.

Not that I don’t usually cook a regular meal on weeknights, but those aren’t all-out, extravagant dishes with all the bells and whistles. They’re more like “what can I cook that’ll taste good and also be relatively healthy for us.”

An easy chicken dish like this fills that need for a weeknight meal.

Green Beans with Bacon and Onion for a Gluten-Free Thanksgiving Dinner

This green bean recipe is so easy is to make, and it’s naturally gluten-free. It’s also a dish that looks good, tastes good, and travels well. Actually, it doesn’t even need to “travel,” since you can easily cook it quickly at the destination, without a lot of fuss.

We had just been invited to Thanksgiving dinner, so I was willing to make whatever the hostess asked me to bring. I would even have been happy to make a gluten-free version of that traditional green bean casserole that “everyone” likes. Green beans are my favorite vegetable choice in many dishes, including that one. But, when I asked the hostess who had just invited us what I could bring, her answer of “Green Beans with Bacon and Onion” was ideal! I like that even better!

Gluten-Free Pumpkin Bread with Honey and Maple

Fragrant nutmeg, ginger and cinnamon will scent the kitchen while your loaf of this pumpkin bread is baking.

Your nose will be happy, then your mouth even happier when you taste the cake-like texture with raisins and pecans in each bite.

Chicken and Dumplings with Gluten-Free Bisquick®

When my sister sent me a box of Gluten-Free Bisquick® Pancake and Baking Mix, the first thing I wanted to try was some…dumplings! A favorite memory of my mom’s cooking is her lighter-than-air dumplings floating on chicken broth with the chicken that made it all so flavorful.
