Chicken Vegetable Soup with Spinach, Gluten-Free

Are you looking for a light soup for lunch that still has the fiber and protein to last you for hours? A few days ago I made this soup for lunch and found it lasted me well through the afternoon, even though it’s without noodles or rice. It was also soothing for a tender tummy when I was a little under the weather recently. There’s plenty of flavor without being overpowering.

Turkey Breast for the Crockpot

No matter what time of year it is – holidays or in between – I can always use an easy, healthy meal. Even better, I like when it works for a “company” meal like this turkey breast! While I wouldn’t really call a crockpot meal “quick,” this one certainly is easy compared to some other ways to cook turkey.

While I like this way to serve turkey dinner with all the trimmings for guests, I also like this method to have some turkey for dinner….

Tomato Bean Soup, Quick & Easy

Have you ever been hungry for a bowl of hearty tomato soup? I wasn’t sure what “hearty tomato soup” meant the other day, but that was the kind of tomato soup I wanted. We were having guests for dinner but they would be arriving late, after another event, and I was preparing steaks to broil and veggies and rice on the side. A crockpot meal would have been ideal for that uncertain dinner hour, but since steaks don’t broil in a crockpot, I opted for soup instead. Tomato soup with some extras that might tide us over till a late supper, or be a good first course. Here is what we had. No leftovers.

Cod Fillets Sauteed with Garlic, Onions and Peppers, Gluten-Free, Casein-Free

Looking for a healthy dish with lots of flavor that’s also quick and easy for a weeknight supper? One serving (including a little over 5 ounces uncooked weight of the fish) has only about 188 calories and 28 grams of protein. Cod, a mild-flavored deep sea fish, is easily found in many supermarkets. Easy to cook in a variety of ways, cod fillets are among my family’s favorites for taste and ease of preparation.
