Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!

Lasagna with Spinach, Gluten-Free

To combat winter fatigue, I decided to do some gluten-free cooking.

… In self-defense, I baked some lasagna!

Most people wouldn’t believe that something Italian like Lasagna could be a part of a gluten-free diet. But, it can… it fits right into my living gluten-free plan!

Bean Salad with Dijon Dressing – Gluten-Free

Here we are again being inundated with ads for rich desserts and treats. This time it’s for Valentines, which I’m all for, naturally, but aren’t there some other desirable gifts besides candy and jewelry? Chocolate may be rich in antioxidants, but it’s also usually rich in sugar and calories that I don’t really need to focus on right now. Instead I’m concentrating on one of my favorite lunches, a salad with beans, crisp veggies and a little Dijon dressing. Maybe we’ll talk about chocolate later….

Corn, Tomato, Celery and Onion Salad – Gluten-Free

Just because it’s winter doesn’t mean I don’t want a salad for lunch. When the snow is piling up on the roads like recently, though, I’m not as eager to shop for fresh salad ingredients as often. This combination from my pantry and refrigerator made an easy salad on one of those snowy days.
