Roast Chicken with Savory Vegetables — Simple, Healthy and Gluten-Free – Yes, Gluten-Free IS Healthy!

We roasted a chicken a few days ago, the way my mother used to make one. She didn’t need to cook for a celiac or gluten-intolerant diet. Her recipe for roast chicken was naturally gluten-free.

Simple. Healthy. Natural. Economical, too. I’m amazed at how much the same food costs if someone else cooks it for me!

It was simple, and it was healthy, and it was gluten-free.

Beef Vegetable Soup with Italian Seasoning and Vegetables – Gluten-Free and Slow-Cooked

This raw, chilly spring day made me think that the time had finally arrived for some warm, comforting soup! I love to curl up on the sofa with a good book or a crossword puzzle and a steaming cup of my home-made soup.

Slow-Cooked Corned Beef Dinner – That’s Gluten-Free As Easy As It Gets!

Many traditional meals have to change somewhat to become gluten-free, but for St. Patrick’s Day, we don’t need to change our favorite meal. Most of the corned beef brisket I’ve found to cook is safe for gluten sensitive people. That doesn’t mean I don’t thoroughly verify the ingredients, but this is one of the easiest meals for someone with celiac disease or gluten intolerance.

Pretty to Look at, but Come on, Spring!

As my husband crept through the falling snow this morning at 10 mph to get to work, I took a few shots here at home just to show what a lovely snowfall we’re having. No wind — so every branch and twig and pine needle has snow piling up on it.

Chicken w/Cannellini Beans, Tomatoes & Italian Parsley – Gluten-Free Living At Its Best!

Coming home hungry to cook dinner is a real bummer… But, it gets lots better, real fast, if you can do it fast like this easy chicken dinner.

And, if friends are joining you too, you will want it to be especially good, but without a lot of fuss, even if you do have celiac disease.

My husband and I shared this gluten-free meal with some friends and found it all of those – quick, easy, and not a lot of fuss. I started it cooking and then was able to visit with our friends while it finished and the kale with minced garlic steamed. I thought that it was yummy and I’d bet you will too!

Green Chili Pulled Pork in the Crockpot, Over Bean Burritos – Gluten-Free

Want to spice up your meal plan without having another pot of chili this week? How about some lean boneless pork loin seasoned with green chilis? That’s good by itself, served like a stew, with maybe a green salad on the side, but you can also fill out the gluten-free meal by serving the pulled pork over some bean burritos. If you like, add a dollop of sour cream or a sprinkle of shredded cheese, and some salsa.
