Roasted Sweet Potato Wedges or Other Gluten-Free Veggies

Roasted vegetables have a more intense flavor and a denser texture than many methods of gluten-free cooking. They are as easy to prepare as the steamed or braised method. I especially like the bit of crusty surface they develop, sort of like on a fried potato, but without the fat.

Gluten-Free Menu Plan for Your Week — March 25, 2012

We’ve been having lots of sunshine this week – it’s early for us to have warm, sunny days. We’re usually still shoveling snow in March. Fresh spring vegetables are showing up to add to my gluten-free menu plan for the week.

Asparagus is one of our favorites….

Meatloaf with Mushroom Sauce – Gluten-Free

A favorite dinner in my house is gluten-free meatloaf with mushroom sauce. My family asks for it regularly. This recipe has gone through the conversion to gluten-free with the help of a different source of bread crumbs for the meatloaf, and a different source of sauce for the topping.

Slow-Cooked Corned Beef Dinner

I’m confident that you and your family will enjoy it as much as we do. ~~~ Enjoy ~~~ Many traditional meals have to change somewhat to become gluten-free, but for St. Patrick’s Day, we don’t need to change our favorite meal. Most of the corned beef brisket I’ve found to cook is safe for gluten sensitive people. That doesn’t mean I don’t thoroughly verify the ingredients, but this is one of the easiest meals for someone with celiac disease or gluten intolerance. It’s Meal Plan Sunday here at Elegantly Gluten Free…

I think that this is a super meal plan. St. Patrick’s Day will be this Saturday, March 17, so I’ve planned a traditional corned beef and cabbage dinner on that day.

Napa Cabbage Slaw with Red Wine Vinaigrette

A salad with napa cabbage has a more tender texture and a milder, sweeter flavor than most types of American cabbage. And, to make it even better, its vitamins and minerals make it a healthy addition to a gluten-free diet.

Menu Plan for March 5, 2012

My gluten-free menu plan for the week is here, even if it is a little bit late. (I like to start the week on Sunday….) I’m putting my week into order with a menu to simplify my daily routine, help with my shopping and manage my family’s apparent tendency towards our less-healthy old favorites four nights out of seven. Now when we have a comfort food, it will be in the plan!
