Gluten-Free Diet Menu Plan For the Week of June 30, 2013

Summer is living up to expectations by being hot and humid…humid on steroids here in N.E. Ohio!

Who wants to spend much time cooking in a kitchen that’s already steamy?

Not me!

I’m keeping the gluten-free menu plan easy by starting the week off with Easy Beef Cube Steaks in the Crockpot, a slow cooker meal that has a low-carb option.

Gluten-Free Diet Menu Plan for the Week of June 16, 2013

There are so many activities going on besides the usual right now — graduations, weddings, vacations, sports — that it seems life is even more hectic than usual. That’s when planning ahead with a Gluten-Free Diet Menu Plan is even more helpful.

Here are seven days’ worth of menus with slow cooker meals like Green Chili Pulled Pork and Beef Round Roast, 30 minute meals like Chicken with Cannellini Beans and Tomatoes, Pasta with Sauce and Veggies, and a skillet full of Scallops Stir-Fried with Garlic, Carrots and Spinach. There are plenty of goodies, too — Oatmeal Applesauce Snack Cake, Trail Mix and Rhubarb Pie to satisfy your sweet tooth….

Preparing healthy snacks is usually time-consuming  The good news is that not every snack has to be complicated or time-consuming to be healthy.  Gluten-free trail mix can be as healthy as you want it to be. Gluten-Free Oatmeal Applesauce Snack Cake

If you are like we are at my house, everyone is looking for snacks.

Personally, I like snacks that are healthier and good too!

To accomplish that, I usually try to make something with more fiber and less refined sugar so I won’t worry about “health issues” when the “munchies” attack.

The applesauce, oatmeal and raisins in this recipe provide fiber, vitamins and other “health conscious” nutrients. And, to make it sweet, the fructose sugar in the apples and raisins provide a positively lovely, delicate sweetness and aroma. The brown rice syrup adds more sweetness and helps the bars stick together.

This snack cake is easy to make. It works well for snacks, lunch boxes and it even works well with yogurt. Of course, it’s a “no-brainer” to have or serve it with a big glass of milk.

Gluten-Free Diet Menu Plan for the Week of June 2, 2013

It’s finally June and summer is just around the corner…

… So I think that it’s time to talk about cookouts, complete with buns and all the trimmings.

In fact, I’ve planned two cookouts in the gluten-free diet menu plan this week. So, we’ll have gluten-free hot dogs one evening and gluten-free hamburgers another evening.
