Oatmeal Raisin Walnut Bars – Gluten-Free

Yesterday I was trying to find a new way to make some of my favorite things. I was contemplating different combinations, varying shapes and textures, flours with more fiber. Gluten-free oatmeal snacks with walnuts instead of pecans. Bars instead of cookies.

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!

Gluten-Free Pecan Pie Minis

Maybe it’s because I grew up in south Texas — where we had pecan trees in our yard — that pecan pie is one of my favorite desserts. Maybe it’s just because pecans in any form are among my favorite flavors. Whatever the reason, these Pecan Pie Minis are the best combination I have found of pie, candy and bite-size dessert.

Gluten-Free Pumpkin Muffins with Agave

Most people don’t realize that pumpkins are loaded with Vitamin A – over 100% of the daily, FDA-recommended value is in just a half-cup serving — plus good amounts of Vitamins C and E, iron and fiber, to name a few of its other benefits. This low-carb, low-fat nutritional powerhouse vegetable is a natural to combine with a low glycemic sweetener like agave nectar.

I made a batch of these gluten-free pumpkin muffins with agave this week. And, I’m glad I did!

They rose well and have a smooth, attractive crust. And, they hold their texture when broken open, not crumbling apart like some muffins do.
