Gluten-Free Pasta Elbows with Sauce & Veggies — an Easy Alternative to Gluten-free Spaghetti

… I usually use my own preference for the proportion of pasta to vegetables in this dish. Try it and decide what works best for you. I often cook more veggies than the recipe calls for. And, I’ll keep them in a separate dish so that I can add more of them to my plate if the mood strikes me.

Depending on how many carbs I’ve already had that day, I may skip the pasta entirely and just have my sauce with the veggies… I really like just the veggies in sauce sometimes.

This is one of my family’s favorite gluten-free ground beef recipes. The gluten-free sauce combined with the ground beef seasoned perfectly to your taste can be a marvelous addition to your meal time.

Pork Chops with Red Sauce and Pasta

We really like pork chop recipes here and even more so when they involve lean gluten-free pork, red sauce and pasta. I like cooking these Boneless Pork Loin Chops because they are so lean and they cook quickly. They first are browned in the skillet, and their flavor then combines with the sauce and the seasonings to make a delicious, satisfying, nutritious meal for everyone.

Gluten-Free Hummus from Cannellini Beans

Basic, gluten-free hummus bears out the old saying that the simplest things are best…a fresh vegetable, a hot bread, a crisp chip…or a basic gluten-free hummus to dip them in. Here is a quick-and-easy-to make hummus made with cannellini beans. Their mild nut-like flavor doesn’t overpower but blends smoothly with the garlic and other seasonings.

Kale, Zucchini & Fusilli Dinner for Your Gluten-Free Diet

Recently I was looking for another way to include kale in some of our gluten-free meals.  Kale is a powerhouse of nutrition to use in a healthy gluten-free diet.  We’ve eaten kale in salads, had it steamed and braised, and even baked it into chips.  I decided this time to include kale in another of our favorite dishes, a “skillet dinner.” You probably know what a “skillet dinner” is, but my personal definition is that it’s a quick skillet-full of several nutritious gluten-free things that I have on hand, including meat, if you want it. In my home, an ideal “skillet dinner” satisfies everyone at my table. Plus, it is fairly easy to clean up. (I especially like the “easy-to-clean-up” [...]

Chicken w/Cannellini Beans, Tomatoes & Italian Parsley – Gluten-Free Living At Its Best!

Coming home hungry to cook dinner is a real bummer… But, it gets lots better, real fast, if you can do it fast like this easy chicken dinner.

And, if friends are joining you too, you will want it to be especially good, but without a lot of fuss, even if you do have celiac disease.

My husband and I shared this gluten-free meal with some friends and found it all of those – quick, easy, and not a lot of fuss. I started it cooking and then was able to visit with our friends while it finished and the kale with minced garlic steamed. I thought that it was yummy and I’d bet you will too!

Lasagna with Spinach, Gluten-Free

To combat winter fatigue, I decided to do some gluten-free cooking.

So, today, I baked some true comfort food… I am so tired of snow and ice. They’re part of winter here, but they just go on for too long! This year has been especially intense. So,…

… In self-defense, I baked some lasagna!

Most people wouldn’t believe that something Italian like Lasagna could be a part of a gluten-free diet. But, it can… it fits right into my living gluten-free plan!
