Pennsylvania Dutch Apple Tart with Gluten-Free Pie Crust

My husband Al loves apple pie!

His mother made apple pie for him for as long as he can remember.

She would often make a single-crust pie with the apples cut in halves and sprinkled with sugar and cinnamon, then dotted with tiny clumps butter that would melt and flow through the whole pie while it baked in the oven. I always like to have a few quick healthy meals handy like this gluten-free recipe made from kale, onion and peppers.

My husband actually likes this combination with kale, even though he never gets excited when he hears it’s on the menu. (Don’t tell him that I know he likes it J)

A Delicious and Easy Lentil Soup Recipe

I don’t know where you live, but in northeastern Ohio where I and most of my family live, the days are getting shorter and cooler, and the nights are sometimes downright chilly. For me, this signals perfect weather for some of my favorite, easy-to-prepare healthy food recipes.

One of my all-time favorites is a healthy, totally vegetarian lentil soup that uses carrots, celery, onion and vegetable stock. But, if you would prefer a non-vegetarian treat, just use beef or chicken stock. Either way it tastes so good on a chilly fall day. Both I and my family absolutely love it.
