I made the most delicious, gluten-free beef rump roast braised in my slow cooker the other day. It was lean and flavorful and it sliced easily so it was easy to serve. The juices were fragrant with the Mediterranean seasoning and the savory vegetables. And, to top it all off, the sandwiches that I will make from the leftovers will be wonderful… We’ve had this before… Many times!
When I did thicken the juices to make a gluten-free gravy the way my husband likes it, we really enjoyed it. I used sweet rice flour for thickening this time. But, arrowroot powder or potato starch flour would work too if you’re cooking paleo.
A little while before serving time, I stirred the thickener into some of the juices and then stirred that back into the crockpot. It made such an easy gravy! There was plenty of flavor in the juices, so without any thickening it would still be excellent if you are on a low-carb diet.
The simplest ideas are sometimes the most useful. This is a simple recipe and it is that simplicity that makes it so good. I did these potatoes in my slow cooker so I made them “on autopilot” while I did other things.
I made the potatoes shown in the picture in the slow cooker as cubed potatoes with olive oil & parsley for seasoning.
Quartered or cubed potatoes with your favorite seasonings would work just as well. I served these recently for dinner with what I call a mini-meat loaf.

It’s a classic stick-to-the-ribs family-style meal that is every bit as good as your favorite stew… And, you can thicken the delicious broth that you’ll get after simmering for several hours in your slow cooker into a silky-smooth gravy that will make the meal even better.
This meal only takes 20-minutes or so to put together and then can simmer for as long as necessary… Whatever that means in your world. It’s a low preparation-time recipe that you and your whole family are sure to enjoy.
The flavors of lean pork and green onion work together so that this easy recipe hardly needs much else. We like these braised chops often, so it’s a good thing the boneless pork loin is so lean and quick to cook. When my family asks, “How long till supper is ready?” — I can tell them this will be ready soon!
It can be on the table in less than 30 minutes. That makes a great weeknight supper, but it tastes good enough for guests, too. Match it with a side dish of asparagus or green beans and possibly some potatoes for a well-rounded meal.
These gluten-free roasted chicken breasts are flavorful and simple, yet are easy to serve and they look great on the plate, too.
And there isn’t a lot of clean-up afterwards, either. In fact, when I served this delicious meal to our dinner guests yesterday evening, it was so well received that there weren’t even any left-over veggies to put away!

I’ve wondered about it often and have now overcome my personal inertia and did something about my curiosity. I liked what I found. And, because of that, I’ve become very interested in it myself since it is, by definition, gluten-free! It contains no grains… Period!
