Gluten-Free Chocolate Cupcakes with Pecans

There are quite a few delicious recipes for gluten free deserts out there. But, this one is one of my all-time favorites. I don’t like some of the gluten free cupcakes I’ve tried but this recipe for gluten free chocolate cupcakes outshines any others that I’ve eaten!

Gluten-Free Chocolate Cupcakes

A moist, rich chocolate flavor, accented with crunch inside from the 2 tablespoons of Cacao Nibs (13 g.) and pecans on top, make these paleo, gluten-free chocolate cupcakes a snack or dessert that’s hard to keep on hand.

In fact, they keep disappearing when my husband is around to the point that I now hide them to make them harder to find so he doesn’t eat them up before I pack my lunches for the week…

… And, he doesn’t usually like gluten free anything. So, I know these paleo cupcakes must be a real treat.

How to Make Marshmallows

… and, we tell visitors who ask that question that they need to talk to the marshmallow manufacturer to find out whether their favorite brand is, in fact, gluten free.

That, of course, is a less than satisfactory answer for many people even though it is the truth.

So, what Al and I decided to do was explain how YOU can become the manufacturer by making your own marshmallows with a fairly easy marshmallow recipe that I found on the internet. That way, if you have a gluten reaction because of the marshmallows, you can fix the problem yourself.

Gluten-Free Rocky Road Candy

Rocky Road Candy is one of my favorite sweets. Since it uses only a few ingredients and doesn’t take a lot of kitchen equipment, it’s also easy to make gluten-free rocky road candy without a lot of extra trouble.

Different kinds of chocolate may be used, like chocolate chips – semisweet or milk chocolate flavor — or Hershey’s milk chocolate bars or even a lower-sugar cacao bar, if you like. Just be sure that the chocolate is gluten-free. (You can check my pantry list for some gluten-free brands.) For this easy gluten-free recipe post I used Hershey’s milk chocolate chips.

Gluten-Free Banana Strawberry Smoothie

Smoothies are among my favorite treats!

Even my husband, Al, loves this Gluten-Free Banana Strawberry Smoothie… almost beyond reason. If I forget and set mine down and walk away…leaving it momentarily unguarded… Well, I guess you can imagine what happens then 🙁 …

… He’d probably say something quite male like: “If you snooze, you lose” or “You got what you deserved”… The bottom line? I don’t usually do that… EVER! But, that’s enough about Al.

Not only is the flavor of this smoothie like a dessert but… It’s good for me, too… For breakfast, lunch, dinner or snacks. It’s full of powerhouse nutrients, vitamins and minerals!

There are many different ways to make smoothies, but this is a good way to start if you’ve never done it before…

Gluten-Free Vanilla Pudding with Layers of Strawberries Is Sure to Excite Your Taste Buds!

When I have fresh, juicy strawberries, I like a simple, gluten-free vanilla pudding to accompany them.

The pudding is a traditional dish made with milk, cornstarch and egg that is so easy to stir together on the stovetop.
