In my family’s opinion, this is one of the best sandwiches there is… Period!
It’s a great meal for a gluten-free diet. It’s also not too hard to make several for a mixed group of gluten-free and gluten-y people since each person can have their own choice of bread on their own plate. You can put one of these sandwiches together in 10 minutes or less for a quick and easy meal.
This winter we’ve been adding more color and flavor to our meals by making our own soups, just like this Yellow Split Pea Soup. It’s so attractive with its yellow color, especially with some fresh parsley to top it.
Some recipes include a ham bone with split peas, but I think yellow split peas have enough flavor on their own that a good stock is sufficient to make a satisfying soup. In the slow cooker, with your favorite stock, this makes a filling dish, suitable for lunch or a light supper. This could easily be vegetarian or vegan by using your favorite vegetable stock.
Have you ever wished you could make your own easy gluten-free sandwiches any time you want to? I baked this gluten-free zucchini bread with some of the squash that is so plentiful in local gardens right now. The moist and flavorful quick bread has a good texture and just enough sweetness to make a great gluten-free snack. It tasted good alone. It also tasted good with apple butter, and also with cream cheese…also with strawberry jam, elderberry jelly, peanut butter and regular butter. The sandwiches were easy to make and kid-friendly!
Basic, gluten-free hummus bears out the old saying that the simplest things are best…a fresh vegetable, a hot bread, a crisp chip…or a basic gluten-free hummus to dip them in. Here is a quick-and-easy-to make hummus made with cannellini beans. Their mild nut-like flavor doesn’t overpower but blends smoothly with the garlic and other seasonings.
I really love split pea soup in my gluten-free diet … It’s high-fiber, has no refined sugar and is highly nutritious. And, my husband likes it even more than I do. He thinks that it tastes great and frequently comes back for seconds.
Actually, this is one of my all-time favorite gluten-free soup recipes. It takes only a minute or two to remove the foreign matter from the bag of split peas. It cooks almost on auto pilot.
It makes 6 to 8 servings with a very small time investment.
Gluten-free and Gluten-y family members alike will all absolutely love this beef round steak with vegetables from the crock pot recipe.
It's a classic stick-to-the-ribs family-style meal that is every bit as good as your favorite stew... And, you can thicken the delicious broth that you'll get after simmering for several hours in your slow cooker into a silky-smooth gravy that will make the meal even better.
This meal only takes 20-minutes or so to put together and then can simmer for as long as necessary... Whatever that means in your world. It's a low preparation-time recipe that you and your whole family are sure to enjoy.

But, no matter what you top it with... Steaming hot from the oven, it's sure to look good and taste delicious too!
... I usually use my own preference for the proportion of pasta to vegetables in this dish. Try it and decide what works best for you. I often cook more veggies than the recipe calls for. And, I'll keep them in a separate dish so that I can add more of them to my plate if the mood strikes me. Depending on how many carbs I've already had that day, I may skip the pasta entirely and just have my sauce with the veggies... I really like just the veggies in sauce sometimes. This is one of my family's favorite gluten-free ground beef recipes. The gluten-free sauce combined with the ground beef seasoned perfectly to your taste can be a marvelous addition to your meal time.
… As I looked around the Internet recently I noticed articles and comments about individuals becoming ill because they used condiments which were not gluten-free. I understand from first-hand experience how very easy it is to accidentally contaminate your food with condiments such as Worcestershire sauce, bouillon cubes and things like this. I’ve done it myself... I don't know how many times.
This week's Gluten-Free Diet Menu Plan is highlighted by the fact that it's got 2 Slow Cooker Meals and 5 quick, 30 Minute Meals. The meals are all quick or "no-brainer" easy! I guess it reflects the fact that I've been out of the office for several weeks on a temporary assignment. So I'm "knockin' 'em out" fast and furious today.
