Gluten-Free Diet Menu Plan for the Week of February 24, 2013

I’ve got 7 great days of wonderful dishes lined up for this week’s gluten-free diet menu plan. Here are the highlights.

Stuffed Peppers, a classic in my home, will begin the week. I’ve combined the peppers with raw veggies and biscotti. Now biscotti is really fun to make. I hope you enjoy fooling around in the kitchen like I do.

Then, on Day 2 there will be a Mediterranean-inspired chicken. That’s followed by a Low Carb Meal on Day 3 which features tilapia done in the oven; quick and yummy.

Day 4 is another old favorite in my home… a Crockpot Meal of Beef Stew. My husband absolutely loves this one so I’ll probably need to make extra.

Braised Pork Loin Chops with Green Onion Are Gluten-Free and Paleo

The flavors of pork chops and green onion work together so that this easy recipe hardly needs much else. We like these braised chops often, so it’s a good thing the boneless pork loin is so lean and quick to cook. When my family asks, “How long till supper is ready?” — I can tell them this will be ready soon!

It can be on the table in less than 30 minutes. That makes a great weeknight supper, but it tastes good enough for guests, too. Match it with a side dish of asparagus or green beans and possibly some potatoes for a well-rounded meal.

Gluten-Free Diet Menu Plan for the Week of February 17, 2013

Here we are ready for Presidents Day this week, and even though the groundhog predicted an early spring a few weeks ago, we’re still having winter here. The whole idea of winter makes me want another steaming mug of coffee, so come join me while we look at the gluten-free menu plan for this week.

There are three 30 Minute Meals this week, including the one for Presidents Day. So, in honor of George Washington’s birthday, we’re adding dried cherries to the Marshmallow Crispy Treats.

For the first time this week we are featuring a Paleo Diet Menu (that’s on Day 7).

CrossFit The Paleo Diet To Maximize Health & Fitness

Travis, you’re a self-described Paleo and CrossFit Junkie, and for those who aren’t sure would you tell us what CrossFit is and how you first got involved?

CrossFit is constantly varied functional movement performed at high intensity. In other words, it a general fitness program which mixes gymnastics, weightlifting, running, and body weight exercises all into one workout.

I got started in CrossFit while deployed with the U. S. Navy to northern Iraq. The guys I seen doing CrossFit workouts were super fit, and they were always changing their workout routine. CrossFit delivers results and I was hooked from the first CrossFit workout I completed.

When did you first learn about the paleo diet and was the nutritional foundation something which made sense to you right away, or did it take some convincing?
