Spiced Cranberry Pear Sauce Completes the Holiday Dinner

When I lay out a plan to seat my guests at a dinner, I want to balance the personalities at each table. I want each group to have some who are gentle and mature, some who are a little outspoken and some who maybe are energetic with a few good stories to share. Similarly, when I’m looking for a completing touch to a gluten-free holiday menu, I can add this tangy, saucy, sweet and spicy choice that is already gluten-free — Spiced Cranberry Pear Sauce.

Floride Pamplemousses, Sucré, à la Jami

For those who don’t speak French, I’m remembering a family friend who just turned 20 a few weeks ago and who gave my husband, Al, what I think is a great idea. A loose translation of the title might be “Florida Grapefruit, Sweetened, by Jami.” Here’s the story…

… I had to skip church Sunday because of something that was going on at home (we were watching a friend’s 2 dogs plus 1 of our own, it was raining, etc… just one of those weekends). Anyway, while at church, Al saw our friend Jami standing in the foyer with a grapefruit in her hand, eating it like an orange… or something that wasn’t sour, so, naturally, she immediately caught his attention. To put it succinctly… He was horrified!

If you know Al, you would also know that in addition to being the…

Add Kale, Onion and Peppers to Your Quick Healthy Meals List

I always like to have a few quick healthy meals handy like this gluten-free recipe made from kale, onion and peppers.

My husband actually likes this combination with kale, even though he never gets excited when he hears it’s on the menu. (Don’t tell him that I know he likes it J)

Having several 30 minute meals ready to go when necessary can be a lifesaver.

For more protein to go with these veggies, you can cook an egg or two in the center of the pan during the last few minutes of cooking time. These eggs are not technically poached since they aren’t in water deep enough to cover them, but they will cook nicely if you

Tomato Salad with Oil-Free Vinaigrette

Fresh, vine-ripened tomatoes add so much nutrition to a gluten-free diet — however, their flavor is the main reason I eat them, and I enjoy fresh tomato recipes like this salad. One way to serve them, alone or with other vegetables, is with one of my favorites, this gluten-free salad dressing.

Creamed Tuna is Easy for a Gluten-Free Diet

A perennial dinner favorite in my house is Creamed Tuna. It’s good when I’m short on time and I need to go shopping, but we’re hungry right now…so my gluten-free diet also has to satisfy everyone in the family.

The foundation of this easy dinner is a medium white sauce. I learned a long time ago that a basic white sauce or cream sauce is a kitchen standby, and it’s just as useful for a gluten-free diet as it is for gluten-y cooking. It works for a lot of my favorite 30 minute meals!
