This recipe came about one evening as I was looking for something I could do with eggs and the growing seasonal abundance of vegetables in my refrigerator. I put them all together and, voilà, hybrid frittata on steroids!
At first I was considering a neat, organized frittata, which is a seasoned mixture of beaten eggs with sautéed vegetables added, cooked slowly in a skillet without stirring and then turned as a whole at the end… similar to what you might do with an omelet.
But, what I had in mind was much more than that. I wanted a skillet heaped with scrambled eggs, which are cooked differently than frittatas. I wanted it vibrantly alive because of the scrumptious, savory sautéed veggies in it. And, I had absolutely the right idea… it was delicious!
Anything containing oatmeal and raisins is usually among the all-time favorites in my house, and these muffins are no exception. So, I made several batches of them and experimented a little with the sweetener. These Gluten-Free Oatmeal Raisin Muffins with honey are what we like the best. In fact, a not-to-be-disclosed family member declared that these were absolutely delicious!
I like that the honey is a little better for us than the more traditional granulated cane sugar or brown sugar that is in many of my other muffin recipes.
The first thing I noticed about Ernie’s Salsas, besides being gluten-free, was the high quality of the ingredients used, the short list of ingredients and the variety of flavors.
Ernie sent me five flavors to taste: Gourmet Red, Hawaiian Pineapple Heat, Chesapeake Bay Shrimp, Perfect Peach, and Black Bean and Corn….
We tasted some of each flavor plain, and then also with cucumber slices, pepper strips, celery and carrot sticks, and also with some chips.
I love Brownies!
Especially, Fudge Brownies with Almonds… They are good for serving at a party, packing in a lunchbox or eating for a gluten-free after-school snack…or just any time a rich chocolate treat is in order.
They are dense and moist with chunks of almonds that add just the right amount of crunch.
It’s really hard to keep making lunches and snacks that are interesting even under the best of circumstances.
Plus, the vending machines at work or school have a siren song that almost always sounds better than a lunchbox’s boring old tune.
When the need to be gluten-free is added, lunches can seem even more challenging.
A simple gluten-free baguette, a little garlic salt and some cheese are so easy to transform into an ever-popular snack.
I could make these Gluten-Free Garlic Cheese French Bread Bites every few days in my house.
They’re more popular than popcorn!
