Curry Vegetable Red Lentil Soup

A bowl of this spicy, healthy gluten-free soup made a delicious lunch! As soon as I tasted it, I wanted to post it for you. Let me tell you how I discovered this wonderful treat…

… A few weeks ago my daughter-in-law sent some to me for lunch. But my son, who delivered it, couldn’t remember all of the ingredients, only that it was gluten-free. I enjoyed it and I wanted to learn how to make it.

Of course, I could tell that it had curry seasoning in it and I could taste the smoothness of the coconut milk. The cabbage, cauliflower, carrots and onion were obvious (yum!). But, there was a unique texture and flavor in it that I just couldn’t quite place.

When I found out later that the base was sprouted red lentils, I realized that they added a creamy texture and flavor to the soup that went far beyond what the coconut milk provided.

The soup is healthy in so many ways. It’s naturally gluten-free and can be made mostly from whole foods, except for the curry powder, turmeric and coconut milk – and they’re not far from whole foods.

Gluten-Free Navy Bean Soup

Are dried beans gluten-free? Until recently, I’d have instantly said “Yes!”… keep reading to find out why I was wrong.

Navy beans are one of our favorites around here… and, it’s one of my husband Al’s all-time favorites. He likes them with just about anything…in a salad, as part of a main dish or as a side with dinner. He likes them in many combinations, but most of all, he loves them in soup.

Navy Bean Soup is an easy, gluten-free recipe to make, especially in my slow cooker.

Easy Yellow Split Pea Soup in the Slow Cooker

This winter we’ve been adding more color and flavor to our meals by making our own soups, just like this Yellow Split Pea Soup. It’s so attractive with its yellow color, especially with some fresh parsley to top it.

Some recipes include a ham bone with split peas, but I think yellow split peas have enough flavor on their own that a good stock is sufficient to make a satisfying soup. In the slow cooker, with your favorite stock, this makes a filling dish, suitable for lunch or a light supper. This could easily be vegetarian or vegan by using your favorite vegetable stock.

A Delicious and Easy Lentil Soup Recipe

I don’t know where you live, but in northeastern Ohio where I and most of my family live, the days are getting shorter and cooler, and the nights are sometimes downright chilly. For me, this signals perfect weather for some of my favorite, easy-to-prepare healthy food recipes.
 
One of my all-time favorites is a healthy, totally vegetarian lentil soup that uses carrots, celery, onion and vegetable stock. But, if you would prefer a non-vegetarian treat, just use beef or chicken stock. Either way it tastes so good on a chilly fall day. Both I and my family absolutely love it.
