Tomato Avocado Salad for a Fresh Summer Salad

This quick and easy tomato avocado salad came together quickly for lunch recently. I had been out all morning and when I came home, I was hungry for something to eat…fast! I had an idea for something with a pile of salad greens with a fresh dressing, but happily an even better idea appeared.

I found both tomatoes and an avocado that were finally ripe…it’s so hard to wait for them sometimes.

From that point on, the rest of this lunch was easy.

A fresh summer salad recipe came together almost on its own.

The vegetables themselves provided most of the flavor, so that a little olive oil and vinegar made an ideal dressing. Lemon juice would also taste good instead of vinegar, and it would be completely grain-free and paleo.

Butternut squash is easy to cook several different ways, including the slow cooker, the stove top, the microwave or the oven. I’ve used each method in the past and found that they all have their advantages.

For this recipe I focused more on the set-it-and-forget aspect of a crock pot to cook the squash while I went about doing other things for a while.

All I did before putting it in the crockpot was to halve it and seed it.

Smoothies are among my favorite treats!

Even my husband, Al, loves this Gluten-Free Banana Strawberry Smoothie… almost beyond reason. If I forget and set mine down and walk away…leaving it momentarily unguarded… Well, I guess you can imagine what happens then :-(

… He’d probably say something quite male like: “If you snooze, you lose” or “You got what you deserved”… The bottom line? I don’t usually do that… EVER! But, that’s enough about Al.

Not only is the flavor of this smoothie like a dessert but… It’s good for me, too… For breakfast, lunch, dinner or snacks. It’s full of powerhouse nutrients, vitamins and minerals!

There are many different ways to make smoothies, but this is a good way to start if you’ve never done it before…

… Or, if you love smoothies, I want you to know that this is my favorite smoothie recipe of all time!!!



Curry Vegetable Red Lentil Soup

A bowl of this spicy, healthy gluten-free soup made a delicious lunch! As soon as I tasted it, I wanted to post it for you. Let me tell you how I discovered this wonderful treat…

… A few weeks ago my daughter-in-law sent some to me for lunch. But my son, who delivered it, couldn’t remember all of the ingredients, only that it was gluten-free. I enjoyed it and I wanted to learn how to make it.

Of course, I could tell that it had curry seasoning in it and I could taste the smoothness of the coconut milk. The cabbage, cauliflower, carrots and onion were obvious (yum!). But, there was a unique texture and flavor in it that I just couldn’t quite place.

When I found out later that the base was sprouted red lentils, I realized that they added a creamy texture and flavor to the soup that went far beyond what the coconut milk provided.

The soup is healthy in so many ways. It’s naturally gluten-free and can be made mostly from whole foods, except for the curry powder, turmeric and coconut milk – and they’re not far from whole foods.

Pico de Gallo, or Salsa Fresca (Fresh Salsa) – Naturally Gluten-Free

Salsa has been a staple in my kitchen for a long time.

After all, I grew up in South Texas where salsa appears almost everywhere.

My favorite, though, has always been pico de gallo, also called salsa fresca or “fresh salsa.”
