Chicken Broccoli Parmesan in the Slow Cooker, Ready to Eat – Garnished with a Little Parmesan

 

My husband did not like chicken or sour cream much at all when I met him, but he has since become a fan of them both, especially when they are together in dishes like this saucy gluten-free chicken and vegetable combination.

I especially like how easy this is to put together – it has simple ingredients that don’t take much preparation except to add to the crock pot.  I could easily throw it together before rushing out the door to work or to an appointment, and then later I can come home to a delicious dinner.

We like this for dinner just as it is, but a side dish of gluten-free rotini or brown rice would go well with it.

 

Chicken Broccoli Parmesan in the Slow Cooker

Prep Time: 10 minutes

Cook Time: 4 hours

Total Time: 4 hours, 10 minutes

Makes 2 servings – easily doubled

Ingredients:

 

18 Ounces Frozen Broccoli-Cauliflower Mix (about 1 quart if using fresh, raw)

1 Medium Zucchini, Sliced

2 Boneless, Skinless Chicken Breasts

8 Ounce Can or Jar of Pizza Sauce

1 Cup Chicken Stock or Water

Salt and Pepper to taste

Garnish:

Parmesan for Garnish (optional)

Sour Cream for Garnish (optional)

Directions:

Add ingredients to slow cooker in order listed, except for Parmesan and sour cream.

Cover and cook according to slow cooker manufacturer’s instruction manual. I have cooked this on High for 4 hours.

Cut chicken breasts into slices.

Serve with vegetables. A side of gluten-free rotini pasta or brown rice might be nice, but we haven’t added those to this dinner.

Garnish:

Garnish with Parmesan or sour cream, or both. (Or, omit for a dairy-free dinner.)
