Combining Atkins and Gluten-Free in Mashed Cauliflower
Being on a celiac diet has made one of the popular healthier diets – Atkins — easier, in that cutting out many sources of carbs meant that wheat and gluten was easier to avoid. Many dishes, even meals, for Atkins can be put together without bread, or pasta. A great example would be using mashed cauliflower instead of mashed potatoes for a dinner side dish. It takes roughly the same place as mashed potatoes, but without carbs or gluten.
Mashed Cauliflower
1 pound cauliflower, cut into florets
2 tablespoons heavy cream
1 tablespoon butter
¼ teaspoon salt
Cook the cauliflower florets in boiling water until tender, about 10 minutes. Drain and mash. Add cream, butter and salt. Mix well, reheat carefully if needed, and serve.

With the Atkins diet, though, as with many diet plans, there is also a variety of specialized prepared items like salad dressings and energy bars and ice cream and so forth that may have been Atkins-approved, but which are not necessarily gluten-free. As always, read the labels and proceed with caution!
