Gluten-Free Slow-Cooked Corned Beef Dinner

Slow-Cooked Corned Beef Dinner — That’s Gluten-Free as Easy as It Gets!


Our dinners this week reflect the cold weather that we are still having here in the Snow Belt.  I’ll be SO happy when things warm up! But, since that hasn’t happened yet, I’ll put our oven to use almost every day for this Gluten-Free Menu Plan.

There’s a slow cooker full of corned beef dinner that simmers all day long to start the week, and we’ll try to save some corned beef for sandwiches a few days later.

After that there are five meals that use the oven at least in part, from baked fish fillets, a chicken casserole, some flatbread to make corned beef sandwiches to go with curry soup, a meatloaf and then a pizza dinner.

The final dinner is a chicken stir-fry, but I will use the oven that day, too, to make some cookies.

And every bit of it is gluten-free.

For the Week of  February 16, 2014

Day 1 – Slow Cooker Meal

Slow-Cooked Corned Beef Dinner with Carrots, Potatoes, Onions & Cabbage

Marshmallow Crispy Treats Dressed Up a Little


Day 2 – Oven Meal + a Birthday Cake

Salmon (or Pollock) Fillets Baked with Garlic and Butter

Napa Cabbage Slaw with Red Wine Vinaigrette

Baked Potatoes

Flourless Chocolate Cake (to celebrate a family member’s birthday) and we’ll top it with Toasted Pecan Halves

Day 3 – Oven Meal

Chicken Mushroom Rice Bake with Homemade GF Mushroom Sauce

Fresh Pear Slices


Day 4 – Soup and Sandwich Supper with Fresh Hot Flatbread

Day 7 – Stir-Fry, a 30 Minute Meal

Peanut Butter Cookies with (Optional) Cashews


This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too.   They are wheat-free, barley-free and rye-free.  Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
