Gluten-Free Diet Menu Plan for the Week of January 27, 2013
Here is this week’s gluten-free diet menu plan, full of nutritious, easy recipes to simplify the week and satisfy the hungry family!
I’ve included Tuna Salad with Avocado to go with soup and flatbread or rolls; then a 30 Minute Meal of Cod Fillets with Garlic, Onions and Peppers; and the next night features a casserole of Tamale Pie with a salad. Following that will be roasted cauliflower paired with a simple, low-carb Spinach Quiche and optional ciabatta. Next will be another 30 Minute Meal — Sauteed Chicken Breasts. There are Cabbage Rolls the next night, and the week ends with everybody’s favorite, Pepperoni Pizza topped with their choice of optional artichokes, mushrooms or olives, accompanied by a tossed salad.

Fresh Pineapple Spears
Day 2 – 30 Minute Meal
Cod Fillets Sauteed with Garlic, Onions and Peppers
Buttered Noodles
Sauteed (or Roasted) Shoestring-Cut Butternut Squash
Raspberry Sorbet
Day 3
Mixed Salad Greens and Onion with Ranch Salad Dressing
Apple Nut Muffins
Day 4
Spinach, Cheddar and Monterey Jack Quiche, Gluten-Free & Low-Carb
Roasted Cauliflower
Ciabatta or Flatbread
Baked Apples
Day 5 – 30 Minute Meal with Low Carb Option
Sauteed Chicken Breasts for an Easy Gluten-Free Recipe
With Navy Beans Added (Optional)
Steamed Cabbage Wedges
Strawberry Yogurt
Day 6
Boiled New Potatoes with Garlic & Olive Oil
Tapioca Pudding
Day 7 – Make Ahead Casserole
Pepperoni Pizza Bread with Choice of Optional Artichokes, Mushrooms and Olives
Romaine, Garbanzos, Onion & Red Cabbage Salad with Vinegar & Oil
