Well, we survived another 4th of July weekend.  We had a birthday party, fireworks and the usual visitors to the area that we live in.  It’s hot and likely to stay so for another few days, so I’ve come up with a menu plan that is oriented towards one thing (besides being  delicious and fun)…it’s easy.

There are three 30 minute meals, a slow cooker and an assortment of several fairly easy traditional dishes.  I don’t like cooking when it’s so hot out and I expect that many of you feel the same way I do.

Two meals of note:  Day 1 has a Paleo meal of Braised Pork Loin Chops in a somewhat traditional format.  Day 4 also features a healthy Paleo 30 minute meal.   I hope your family enjoys this week’s menu plan as much we do.

Gluten-Free Diet Menu Plan

For the Week of July 7, 2013


Day 1 – Paleo Diet

Braised Pork Loin Chops with Green Onion

Green Beans and Boiled New Potatoes

Cantaloupe Wedges



Day 2 – 30 Minute Meal

Crab Cakes with Dill Sauce

Mixed Greens and Cucumber with Lemon and Olive Oil Dressing

Roasted Sweet Potato Wedges

Tapioca Pudding


Day 3 — Slow Cooker Meal

Barbecue Pulled Pork in the Slow Cooker

Toasted Buns, Split, Drizzled with Olive Oil

Shredded Lettuce and Thinly Sliced Onion

Pepperoncini Peppers or Dill Pickle Slices


Day 4 – 30 Minute Meal and Paleo Diet

Ground Beef Hash

Kale Salad with Balsamic Vinaigrette

Watermelon Slices


Day 5 – 30 Minute Meal with Low Carb Option

Chicken Stir-Fry with Celery and Onion, plus Portobello Mushrooms and Broccoli Florets

Steamed Rice or Sautéed Shoestring-Cut Zucchini

Sliced Fresh Peaches


Day 6

Pasta Elbows with Meat Sauce and Veggies

with Broccoli, Cauliflower, Carrots and Yellow Squash

Strawberry-Rhubarb Sorbet


Day 7 – Dinner Guests

Pan-Grilled Salmon or Ocean Perch (Wild-Caught Only)

Spinach Sautéed with Salmon Last Few Minutes

Fresh Lemon

Shredded Potato Patties

Flourless Chocolate Cake with Fresh, Ripe Strawberries




This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too.   They are wheat-free, barley-free and rye-free.  Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
