This week the Gluten-Free Diet Menu Plan focuses on low carb dishes. These meals are simple to make … And, even without a lot of starchy side dishes, it’s filling and probably a lot healthier.
Personally, I feel better when I eat low carb meals like these. I’ve always been a fan of the Atkins and similar diets.
And, these are dishes that the rest of my family likes, too… not just a little bit, either.
They like them a lot, especially my husband, but often he does want some rice or potatoes on the side.

for the Week of June 8, 2014,
with a Focus on Low Carb Meals
Sautéed Shoestring Zucchini
Slow-Cooked Corned Beef Dinner (leave out the potatoes for low carb)
Egg Salad on Tomato Star with Kalamata Olive Garnish, with Bacon on Spring Salad Mix
Shrimp Stir-Fry with Bok Choy, Mushrooms and Spinach (skip the rice and noodles)
This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too. They are wheat-free, barley-free and rye-free. Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
