Gluten-Free Chicken with Avocado, Tomato & Colby-Jack Cheese


This week’s Gluten-Free Diet Menu Plan starts off with a South of the Border chicken entrée that is good enough for guests, with a dessert of flan and a snack of Oatmeal Raisin Walnut Bars to start the week off.

The 2nd day, which will be St. Patrick’s Day, is a traditional corned beef dinner which, even though I’m not Irish, I cook at every opportunity.  I’ll try to save enough of it to make the Corned Beef Hash Skillet a couple of days later.

On the third day I’ll have an easy chicken and biscuits dinner.  The next two days are both 30 minute meals…the Corned Beef Hash Skillet I mentioned above and some Cod Fillets Sautéed with Garlic, Onion and Peppers…because I just don’t want to spend all my time in the kitchen!

After that is a Pork Sirloin Pot Roast dinner that is easy to make and also free of the top 8 allergens.  The final day of this week’s menu plan has a 30 minute meal of Salmon Croquettes, Quinoa Salad and a dessert of Marshmallow Crispy Treats.

Day 1 – South of the Border

Day 2 – St. Patrick’s Day

Slow-Cooked Corned Beef Dinner with Cabbage, Carrots, and Potatoes

Irish Soda Bread from Simply Sugar & Gluten-Free


Day 3 – An Easy Chicken and Biscuits Meal

Chicken Stew with Carrots and Celery

Gluten-Free Biscuits from Simply Gluten-Free


Day 4 – 30 Minute Skillet Dinner

Corned Beef Hash Skillet

Tapioca Pudding Cup


Day 5 – 30 Minute Meal

Cod Fillets Sautéed with Garlic, Onions & Peppers

Kale, Zucchini & Fusilli

“Buffalo Wing” Chex Mix from Tasty Eats at Home


Day 6 – Top 8 Allergen Free Dinner

Pork Sirloin Pot Roast

Pears and Berries Cup


Day 7 – 30 Minute Meal

Salmon Croquettes

Quinoa Salad with Cucumber, Onion, Parsley and Tomato

Marshmallow Crispy Treats Dressed Up a Little



This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too.   They are wheat-free, barley-free and rye-free.  Some are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
