Gluten-Free Diet Menu Plan for the Week of March 17, 2013, Starts with Slow-Cooked Corned Beef Dinner
Are you wondering how to stay on a gluten-free diet and still enjoy some traditional St. Patrick’s Day goodies? Here are some menu ideas that will see you through the day and take your menu plan all the way to the end of the week.
Two of these main dishes are made in the crockpot – the corned beef and the beef round roast — to make great meals without hours of watching something cook.
There are three 30 Minute Meals this week – corned beef sandwiches, broiled salmon and pizza topped with shrimp. The chicken stir fry is quick, too, but the sweet black Thai rice that is paired with it takes a little longer to cook so I usually allow almost an hour total time for that dish.

Day 1 – St. Patrick’s Day
Slow-Cooked Corned Beef Dinner (that includes cabbage, potatoes and carrots)
Pistachio Cupcakes in a Jar by Carol Kicinski at Simply…Gluten-Free
Day 2
Reuben Sandwiches (like Canyon Bakehouse’s recipe), (except that I’ll sub corned beef for the pastrami)
Gluten-Free Irish Scones
Day 3
Chicken Stir-Fry with Bean Sprouts, Celery and Kale (I’ll sub kale for the broccoli and add some bean sprouts)
Sweet Black Thai Rice with Sunflower Seeds and Veggies
Pineapple Chunks
Day 4 – 30 Minute Meal
Fettuccini with Garlic and Oil
Steamed Green Beans
Chocolate Tapioca Pudding
Day 5 – Paleo Diet
Beef Round Roast in the Crockpot
Sautéed Kale, Onion and Peppers
Mashed Potatoes
Paleo Peanut Butter Patties by Elana at Elana’s Pantry
Day 6 – 30 Minute Meal
Pizza with Garlic Shrimp, Mushrooms and Roma Tomato (I’ll sauté shrimp, mushrooms and garlic in oil and sub that for the pepperoni)
Lemon Sorbet
Day 7 – Soup in the Pot
Blackeyed Pea Soup with Veggies
Fresh Sliced Strawberries
This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too. They are wheat-free, barley-free and rye-free. Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
