Gluten-Free Diet Menu Plan for the Week of March 30, 2014
This week will be busier than ever for me. Because of that I planned the Gluten-Free Diet Menu Plan to have one day of comfort food – Chicken and Dumplings with Peas and Carrots! And, the rest of the week will be full of slow cooker meals, 30 minute meals and one easy casserole.
For a busy schedule I think a healthy diet is more important than ever. That’s why I try to maintain a balance of protein-rich food, lots of fiber and plenty of nutritious vegetables….plus for active people there should be fuel that includes plenty of complex carbs.
Much of the time I prepare carb-rich dishes separately so that I can leave the carbs for others who can use them better…like Al. He thrives on them. Al and a low carb diet will never meet!

For the Week of March 30, 2014
Day 1 – Comfort Food
Peas and Carrots
Chocolate Chip Cookies
Day 2 – Slow Cooker Meal
Boiled Buttered Potatoes
Day 3 – 30 Minute Meal
Carrots and Parsnips (Horseradish is optional)
Day 4 – 30 Minute Meal
Strawberry Yogurt Cup
Day 5 – 30 Minute Meal
Mixed Greens Tossed Salad
Oatmeal Applesauce Snack Cake (it takes a little longer than 30 minutes, but it can finish baking while you’re eating dinner)
Day 6 – Slow Cooker Soup Meal
Day 7 –Casserole Supper
Sautéed Onions, Peppers and Mushrooms (with above recipe)
This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too. They are wheat-free, barley-free and rye-free. Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
