Gluten-Free Diet Menu Plan for the Week of October 21, 2012

Beef Tacos with Salad and Refried Beans finished off by a dessert of Applesauce Cake with Cherries and Walnuts kick-off this week’s culinary extravaganza.  And, rushing forward … right on that Applesauce Cakes’ heels, is one of the easiest meals of the week… A nutritious dinner of Cod Fillets Sauteed with Garlic, Onion and Peppers all rolled up in a wrap.

Altogether there are three 30 Minute Meals on this week’s menu to help make dinners a little easier on busy nights.

One of my favorites this week is the gluten-free recipe for a slow cooker Blackeyed Pea Soup.  I hope you enjoy it as much as my family does!  Here’s what it looks like all fixed up and ready to go:

Lettuce Salad With Tomato, Onion, Radish and Ranch Dressing

Refried Beans

Applesauce Cake with  Cherries and Walnuts


Day 2 – 30 Minute Meal

Cod Fillets Sautéed with Garlic, Onions and Peppers in a wrap

Flatbread like Sandwich Petals

Fresh Pear Slices with Cheese


Day 3

Chicken Cacciatore

GF Fettucini with Olive Oil

Eggplant or Squash Roasted (like Roasted Sweet Potatoes)

Lemon Meringue Pie made with

Multi-Purpose Pastry Dough from Gluten-Free Homemaker


Day 4 – 30 Minute Meal

Pan-Grilled Pork Chops

Garbanzo, Zucchini, Feta and Pasta Salad

Sliced Melon


Day 5

Meatloaf with Mushroom Sauce

Baked Potatoes

Buttered Green Beans

Fruit Yogurt


Day 6 – 30 Minute Meal

Chicken and Dumplings with Gluten-Free Bisquick®

Sliced Peaches


Day 7

Blackeyed Pea Soup with Veggies

Ground Beef Hash

Romaine Salad with Broccoli, Carrots, Onion, Raisins, Red Cabbage and Ranch Dressing

Butterscotch Pudding


This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac disease, but I’ve found that people who have no food allergies like these recipes, too.   They are wheat-free, barley-free and rye-free.  Many of these gluten-free recipes are also casein-free, dairy-free, egg-free, lactose-free, nut-free and refined sugar-free.
