Gluten-Free Diet Menu Plan for Week of April 22, 2012

Hi Everybody –

Here’s this week’s Gluten-Free Diet Menu Plan.  You’ll notice the format is a little different than what we’ve done in previous weeks.  This is because we’ve been trying different ways of getting the job done to see what works best.

While it’s been interesting trying some of the different versions, some of them were too time-intensive and some of them just didn’t look right, so I decided on the simple version which is what you see this week and will see in future weeks.

Day 1

Lunch:

Beef Bologna Wrap

Dinner:

Picante Chicken Enchiladas from Pace — I’ll sub corn tortillas for the flour tortillas, and I’ll use Daisy sour cream.

Pinto Beans

Spanish Rice

Dessert:

Lemon Squares

 

Day 2

Lunch:

Egg Omelet with Cheddar and Spinach

Dinner:

Bacon, Lettuce and Tomato Sandwich on homemade focaccia

Iceberg Salad with Onion, Radish and Ranch dressing

Dessert:

Blueberry Pie with Cornstarch and Agave

 

Day 3

Lunch:

Pumpkin Muffins with Agave

Dinner:

Tilapia (sub for Cod) Fillets Sauteed with Garlic, Onions and Peppers

Braised Kale

Steamed Rice

Dessert:

Vanilla Ice Cream

 

Day 4

Lunch:

Spring Greens, Cucumber, Onion, Pepper & Tomato Salad with Balsamic Vinaigrette Dressing With Honey & Onion

Dinner:

Spaghetti with Meat Sauce (regular pasta for the gluten-lovers and shoe-string-cut zucchini for gluten-free “pasta”)

Eggplant Parmesan

Dessert:

Pineapple Chunks

 

Day 5

Lunch:

Sardines and Crackers

Dinner:

Ground Beef Hash

Romaine with Carrot, Onion, Red Cabbage & Ranch Dressing

Dessert:

Applesauce Cake With Cherries and Walnuts

 

Day 6

Lunch:

Butter Lettuce, Spinach, Romaine, Frisee, Arugula and Radicchio Salad with Thousand Island Dressing

Dinner:

Roast Chicken with Savory Vegetables

Twice-Baked Potatoes

Dessert:

Orange Sections

 

Day 7

Lunch:

Broccoli Salad with Olives

Dinner:

Beef Round Eye Roast

Potatoes Cooked with the Roast (added last 45-50 minutes)

Green Beans Cooked with the Roast (added last 30 minutes)

Dessert:

Honey, Peanut Butter & Chocolate Crispy Rice Treats
