We have lots of things to do with avocados which add especially wonderful touches to a gluten-free diet, but possibly our favorite is guacamole. We scoop it up with chips or spoon it on our tacos. Combined with other dishes or by itself, it’s delicious.
Here’s one of my all-time favorite recipes…
- 2 Medium Avocados, very ripe
- 1/2 Small Onion, cut up into chunks
- 3 Dashes Tabasco Sauce, to taste
- 1 Tablespoon Cilantro, snipped
- 1 Tablespoon Lime Juice
- 1 Clove Garlic, minced or 1/8 Tsp Garlic Powder
- 1/4 Teaspoon Salt
- 1/2 Cup Sour Cream
Peel, seed and cut up the avocados.
Peel and cut up the onion.
In a blender container or food processor bowl, combine avocados, onion, Tabasco sauce, cilantro, lime juice, garlic, salt and sour cream.
Cover and process till mixture is smooth, scraping sides as necessary.
Transfer to a serving bowl.
Cover and chill at least 2 hours or up to 24 hours.
Serve with chips or crackers.
This is a frugal recipe for those with gluten intolerance or gluten sensitivity, but it is also well-liked by people who have no food allergies. It is gluten-free (contains no wheat, barley or rye flour), egg-free, nut-free and refined sugar-free.
