Gluten-Free Menu Plan for the Week of February 1, 2015
Well, here we are again… Like the old ditty-song says: “2nd Verse, Same as the First”… Sort of… Anyway…
… Last weekend a blizzard northeaster went up the east coast of of the United States and this weekend it’s starting to snow in Chicago as I’m writing this and sometime in the early morning hours of Sunday, it’s going to start snowing here near Cleveland, Ohio.
We are not going to have the blizzard winds but we are expecting to have somewhere between 8 and 18 inches before Monday, Noon, here where Al, I and our 3 dogs live.
So this Gluten-Free Menu Plan is going to be just what “the Doctor ordered”… plenty of cold weather-type, “snowed-in” foods like GF Carne Guisada with Pico de Gallo and warm Tortillas or Chips… on Sunday and which, by the way, should go quite well with this year’s SuperBowl on Sunday Evening.
Then on Monday, as the storm begins to wind down, Crock Pot Gluten Free Split Pea Soup with Carrots, Celery, Onion and Ham accompanied by homemade GF flat bread will be just the thing to warm us up as the front behind the storm passes by and the temperatures begin to tank.
Which will remind us that while Monday may be Groundhog Day a few miles across the border from where we live in Ohio, in Punxsutawney, Pennsylvania, and Punxsutawney Phil (the groundhog) will be checking for his shadow to prognosticate how many weeks remain in winter, we are still in the icy grip of Old Man Winter here in northeastern Ohio.
So, while the bottom line is that it’s going to be cold and snowy most of the coming week, this week’s menu plan may be just what you need to deal with the cold, wintery weather…
