Gluten-Free Menu Plan for the Week of January 4, 2015

Gluten-Free Chicken Stew with Carrots and Celery

Gluten-Free Chicken Stew with Carrots and Celery

To start the year off, here is a gluten-free menu plan for the week, complete with main dishes, sides and even a couple of sweets for lunches, desserts and snacking.

While this is a complete, family-style menu, some of these recipes have options for healthier low carb eating.  Sometimes these are sauces and gravies that are not thickened.  To do that, I will remove my portion of a dish before thickening a sauce, and I’ll just keep it warm while I finish preparing the regular thickened sauce or gravy that the family is expecting.

Other times I simply serve my part of the main dish over a steamed vegetable such as chopped spinach, broccoli florets or riced cauliflower. Any high carb side dishes are optional in my menus!

I almost always prepare a starchy side dish, like rice or potatoes or pasta, for the rest of the family, but I rarely eat those myself.  That is my general plan year-round, although I think in January, after the wealth of sweets and other goodies that may have been indulged in during the holiday season, I am more aware of the importance of some control over my carbohydrate intake!

Here are some gluten-free recipes that include 30 minute meals and easy gluten-free recipes for the skillet or the slow cooker.  Some are even okay for a paleo diet.

Enjoy!

This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too.   They are wheat-free, barley-free and rye-free.  Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
