Well, another week is already here, and this gluten-free menu plan will help get you through it with a lot less stress…and healthier eating, too!
It’s a whole week full of low carb dishes that I think you’ll enjoy from start to finish. Since I am stricter about eating low carb meals than my husband Al is, I do fix him starchy sides when he wants.
I know from first-hand experience that these meals are good just as they are. But, it is easy to add a side of rice, potatoes or pasta if someone in your family would enjoy it, without a lot of extra fuss… Just like I do for my husband, Al.
Gluten-Free Menu Plan for the
Week of October 12, 2014
Day 1 – Low Carb Pot Roast
Cauliflower (added to the Pot Roast the last ½ hour of cooking)
Day 2 – Hearty Low Carb Beef
Braised Beef au Jus made Low Carb
Day 3 – Low Carb Chicken Skillet
Day 4 – Paleo Beef Sandwiches
on slices of a paleo bread like Elana’s Dark “Rye” Bread
Sliced Onion, Tomato, Mixed Greens
Day 5 – Low Carb Soup and Salad
Day 6 –Beef Skillet Dinner
Beef Roast Cubes with Kale, Zucchini and Fusilli Skillet (for low carb double the squash and omit the pasta)
Day 7 – 30 Minute Meal – Low Carb Seafood Supper
Parsley Pesto or Fresh Lemon Juice
This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too. They are wheat-free, barley-free and rye-free. Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
