This week’s gluten-free menu plan has a couple of quick and easy days, a scrumptious braised Tex Mex meal, a casserole, a crock pot dinner that makes enough for sandwiches the next day, and a pot roast dinner.

With a menu plan like this it’s easier to do my shopping, and I need that help even more since gluten-free shopping can take longer with all those labels to read.  The manufacturers sometimes change things without any notice, and I hate finding out after I’ve eaten something that it was not gluten-free anymore!

Gluten-Free Menu Plan
For the Week of September 21, 2014

Day 1 – Quick & Easy

Pepper, Onion and Green Bean Scrambles, Hybrid Frittata
Bacon Strips
Rotini Salad with Cauliflower, Peppers and Tomato

Day 2 – Tex Mex Supper

Carne Guisada
Tossed Salad of Mixed Greens, Avocado, Tomato and Onions
Pico de Gallo

Day 3 – Stuffed Peppers Casserole

Chicken Stuffed Peppers
 Collard Greens with Garlic and Lemon


Day 4 – Slow Cooker Meal

Mediterranean Beef Rump Roast (save some for tomorrow)
Zucchini, Tomato and Onion added to crock pot last 30 minutes
Cauliflower with (Garlicky) Parsley Sauce


Day 5 – Sandwich Supper

Roast Beef Sandwiches (from leftovers)
Lettuce, Onion and Tomato
Elana’s Bread 2.0 from Elana’s Pantry


Day 6 – Pot Roast Dinner

Pork Sirloin Pot Roast
Broccoli, Sugar Snap Peas and Peppers (added to pot roast last 30 minutes)
Baked Sweet Potatoes


Day 7 – 30 Minute Meal

Baked Salmon Fillets with Garlic and Butter
Steamed Asparagus


This gluten-free menu plan is designed for those with gluten intolerance, gluten sensitivity, or celiac (coeliac) disease, but I’ve found that people who have no food allergies like these gluten-free recipes, too.   They are wheat-free, barley-free and rye-free.  Many are also suitable for the paleo diet or may be casein-free, dairy-free, egg-free, lactose-free, nut-free or refined sugar-free.
