Gluten-Free Sandwich Petals Wraps

Sandwich Petals, the gluten-free 10-grain oval flatbread that comes in three flavors — Agave Grain, Spinach Garlic Pesto and Chimayo Red Chile — look like they’d make beautiful wraps for lunch.  When I found some last week, I knew what we’d be having for lunch the next day.

Their package says they’re gluten-free, dairy-free, soy-free and nut-free.  They keep on the shelf until the package is opened, so there is no freezing needed.  The package also says, “Best when gently reheated.  Allow 30 seconds per petal – hot flat grill or microwave wrapped in moistened paper towel.”  I heated mine on a hot grill and they rolled with no problem for the wraps I made.

Since I grew up in Tex-Mex country, I was familiar with flour tortillas.  There are lots of things a flour tortilla will do that a corn tortilla just can’t manage without cracking and falling apart.  (I’ve missed them a lot since I went gluten-free.)  Handling these Sandwich Petals was similar to flour tortillas for me.

To begin with the mildest flavor of flatbread, I made Beef Bologna Wraps With Gluten-Free Agave Grain Sandwich Petals.

My husband Al thought it tasted pretty bad.  (He’s a devoted fan of flour tortillas, I’m afraid — nothing whole grain about them.)

He didn’t try the other two flavors, but I must say, I liked all three of them.  While the Chimayo Red Chile flavor looked like it might be spicy, it was actually very mild — possibly my favorite of the three.  None of them had an overpowering flavor, just a pleasant one.  Even though I could see some variations in the color of the flatbread, the texture was smooth.

Here’s how I made the meat and cheese wrap:

Beef Bologna Wrap With Agave Grain Sandwich Petals

Ingredients:

2 Each Agave Grain Sandwich Petals

1 Teaspoon Mayonnaise

1 teaspoon Horseradish Sauce (I used Woeber’s)

2 Romaine Lettuce Leaves, or shredded lettuce

1/2 Cup Cucumber, thinly sliced or shaved lengthwise, optional

1/4 Cup Vidalia Onion, thinly sliced, optional

2 Ounces Swiss Cheese, Natural, or Cheddar, optional

4 Ounces Beef Bologna Slices, lean

2 Dashes Pepper

Directions:

Total Prep Time = 5 minutes

Warm the Sandwich Petals or flatbread as directed on the package — in a skillet or between moistened paper towels in the microwave for 30 seconds — until flexible enough to roll without breaking.

Spread with the mayonnaise and horseradish.

Layer lettuce, cucumber, onion, cheese and meat on top, starting all of them right at the edge of one of the narrow ends.

Sprinkle with pepper.

Roll from that narrow end, tucking the ends of the lettuce, cheese and meat under carefully as you start.

Lay the wrap on a plate with the open edge on the underside.    Cut in two pieces and serve.

Makes 2 wraps.

Scrambled Egg Wraps with Gluten-Free Spinach Garlic Pesto Sandwich Petals

Ingredients:

2 Each Spinach Garlic Pesto Sandwich Petals

1 Teaspoon Butter or Margarine

4 Eggs, stirred with a fork until frothy

1/4 teaspoon Salt

Dash Pepper

Directions:

Total Prep Time = 8 minutes

Mix the salt and pepper with the eggs.  In skillet over medium heat, melt the butter or margarine.  Scramble the egg mixture until well done, with no shiny spots remaining.

Meanwhile, warm the Sandwich Petals or flatbread as directed on the package — in a skillet or between moistened paper towels in the microwave for 30 seconds — until flexible enough to roll without breaking.

Spread the cooked eggs over the flatbread, all the way to the edge on one of the narrow ends.

Roll from that narrow end, tucking some of the eggs under carefully as you start.

Lay the wrap on a plate with the open edge on the underside.    Cut in two pieces and serve.

Makes 2 wraps.

Melted Cheese Wrap with Chimayo Red Chile Sandwich Petals

Ingredients:

2 Each Chimayo Red Chile Sandwich Petals

1 Teaspoon Butter or Margarine

2 Ounces Cheddar Cheese, sliced or shredded

Directions:

Total Prep Time = 8 minutes

In skillet over medium heat, melt the butter or margarine.

Warm a Sandwich Petal for 30 seconds (prepare one at a time) — until flexible enough to roll without breaking.

Spread half the cheddar cheese over the flatbread, all the way to the edge on one of the narrow ends.

Roll from that narrow end.

Prepare the next one the same way.

Lay the wraps on a plate with the open edge on the underside.    Cut each in two pieces and serve.

Makes 2 wraps.
