A summer staple around many campfires and grills is a gooey, rich gluten-free chocolate somemore for dessert. They are also easy in the kitchen. Find some gluten-free graham crackers, some marshmallows and your favorite chocolate — I like semisweet chocolate, but milk chocolate or whatever else you might prefer will work, too.
In this case I used chocolate chips, which worked fine since it was on a plate, but it wouldn’t have been too easy over an outdoor fire.
The Grainless Baker Graham Crackers were just the right size, and their texture was good. The flavor was not quite what I’d like best, although they worked well enough with this recipe for me to enjoy them. My hubby tasted only one, though, and didn’t like the flavor enough to eat another one.
For Linda at the Gluten-Free Homemaker‘s “Gluten-Free Wednesdays” I thought these would express my mid-summer cooking interests best — sweet and easy!
Somemores – Semisweet, Gluten-free and Microwaved
4 Each Graham Crackers, “The Grainless Baker” or other GF brand
2 Regular Marshmallows, GF (Are marshmallows gluten-free? Yes, you should check their ingredients like everything else you eat.)
1 Ounce Semisweet Chocolate Chips, or Chocolate bar
Place 2 squares of graham crackers on a microwavable plate. The gluten-free crackers I used this time were from “The Grainless Baker” and were just the right size for one marshmallow each.
Layer with the semisweet chocolate and then a marshmallow. Microwave for about 20-30 seconds, watching carefully so you can stop the cooking as soon as the marshmallows start to expand.
As soon as the marshmallows have expanded, remove from the microwave and top with the remaining graham crackers.
