Add Kale, Onion and Peppers to Your Quick Healthy Meals List

I always like to have a few quick healthy meals handy like this gluten-free recipe made from kale, onion and peppers.

My husband actually likes this combination with kale, even though he never gets excited when he hears it’s on the menu. (Don’t tell him that I know he likes it J)

Having several 30 minute meals ready to go when necessary can be a lifesaver.

Gluten-Free Diet Menu Plan for the Week of October 14, 2012

This week’s gluten-free diet menu plan begins with a hearty Tomato Bean Soup to accompany some Broiled Tilapia Fillets. We had a guest with us for this meal today so I cooked more sides than usual and it turned out surprisingly well. Both my husband and his buddy went through the sides almost like they weren’t there. They really seemed to enjoy the meal.

As the week’s plan moves along, there are several – actually four – 30 Minute Meals and one Slow Cooker Meal to help make dinners a little easier.

My personal favorite this week is the Roast Pork Loin Wrap on Day 2. I’m testing some different versions of flatbread lately, and I’ve really been enjoying the wraps…

Gluten-Free Diet Menu Plan for the Week of October 7, 2012

I’m running behind this week but I finally finished this week’s gluten-free diet menu plan. Since I usually cook my menu plans for my family, I can tell you what actually happened with the dishes that I’ve already prepared. Since it’s now Wednesday, here’s how Sunday and Monday turned out.

Tuesday, I departed from the plan because of circumstances. But, having a basic plan made it easy to decide what to do in spite of how things went during the day.

Creamed Tuna is Easy for a Gluten-Free Diet

A perennial dinner favorite in my house is Creamed Tuna. It’s good when I’m short on time and I need to go shopping, but we’re hungry right now…so my gluten-free diet also has to satisfy everyone in the family.

The foundation of this easy dinner is a medium white sauce. I learned a long time ago that a basic white sauce or cream sauce is a kitchen standby, and it’s just as useful for a gluten-free diet as it is for gluten-y cooking. It works for a lot of my favorite 30 minute meals!

Chicken and Penne with Kale and Tomatoes for an Easy Chicken Dinner

Chicken strips, red tomatoes, green kale and cream-colored pasta – I like how an easy chicken dinner can have such eye appeal. Some people who won’t normally eat many veggies will happily chow down on these mixed with pasta.

This gluten-free chicken penne is quick to prepare – 30 minutes or less. I used Tinkyada penne when I made this chicken pasta recipe but any pasta you like will work.

Pan-Grilled Pork Chops for a Quick Gluten-Free Meal

Pan-Grilled Pork Chops, lightly seasoned and golden-browned, always entice me with their aroma, and since they’re boneless, they cook fast to make a gluten-free dinner that everyone enjoys.

The pan juices are flavorful and work well to spoon over the chops when served. If you like, you can thicken the juices to make a delicious gluten-free pork chop gravy.
