Pan-Grilled Asparagus, Garlic and Parsley
As fresh asparagus begins to show up in the produce market in abundance, I find many recipes to enjoy it – soups, salads, sides, quiches – you get the idea. The best way to enjoy it, though, is perhaps the simplest – pan-grilled in a little oil (or, if you’re like my husband, in a little butter) until crisp-tender, with simple herbs and maybe a squeeze of lemon just before serving. This is cooking gluten-free, making food everyone will like.

Roast Chicken with Savory Vegetables — Simple, Healthy and Gluten-Free – Yes, Gluten-Free IS Healthy!
We roasted a chicken a few days ago, the way my mother used to make one. She didn’t need to cook for a celiac or gluten-intolerant diet. Her recipe for roast chicken was naturally gluten-free.
Simple. Healthy. Natural. Economical, too. I’m amazed at how much the same food costs if someone else cooks it for me!
It was simple, and it was healthy, and it was gluten-free.

Corn, Tomato, Celery and Onion Salad – Gluten-Free
Just because it’s winter doesn’t mean I don’t want a salad for lunch. When the snow is piling up on the roads like recently, though, I’m not as eager to shop for fresh salad ingredients as often. This combination from my pantry and refrigerator made an easy salad on one of those snowy days.

Tomato Bean Soup, Quick & Easy
Have you ever been hungry for a bowl of hearty tomato soup? I wasn’t sure what “hearty tomato soup” meant the other day, but that was the kind of tomato soup I wanted. We were having guests for dinner but they would be arriving late, after another event, and I was preparing steaks to broil and veggies and rice on the side. A crockpot meal would have been ideal for that uncertain dinner hour, but since steaks don’t broil in a crockpot, I opted for soup instead. Tomato soup with some extras that might tide us over till a late supper, or be a good first course. Here is what we had. No leftovers.

Looking for a healthy dish with lots of flavor that’s also quick and easy for a weeknight supper? One serving (including a little over 5 ounces uncooked weight of the fish) has only about 188 calories and 28 grams of protein. Cod, a mild-flavored deep sea fish, is easily found in many supermarkets. Easy to cook in a variety of ways, cod fillets are among my family’s favorites for taste and ease of preparation.

Green Beans with Bacon and Onion for a Gluten-Free Thanksgiving Dinner
I would even have been happy to make a gluten-free version of that traditional green bean casserole that “everyone” likes. Green beans are my favorite in many dishes, including that one. But, when I asked the hostess who had just invited us, her answer of “Green Beans with Bacon and Onion” was a wonderful surprise! I like that even better!

Gluten-Free Rhubarb Pie
Thinking about baking for my hubby brings up the sole question of what kind of pie. (Pie is always at the top of his list, it seems.) With all the flavorful rhubarb showing up in yards and gardens and supermarkets this time of year, what better time to make a rhubarb pie? There’s the original, focused, undistracted Rhubarb Pie, and after that, there are options like Strawberry-Rhubarb Pie, not to be outdone by Apple-Rhubarb Pie, and then of course there could be a Rhubarb Custard Pie…but let’s not get too far afield at this point. I don’t make pies too often because we just don’t need that much sugar in our diets these days, but sometimes everyone needs dessert.
