Peanut Butter Cookies with Cashews

Some people think that gluten-free cooking always tastes bad, or at least that it’s always worse than “gluten-y” food. They would be wrong.

No one wants poor imitations of good food. Gluten-free living should have wonderful food that is also gluten-free. No reason it shouldn’t also be nutritious…full of fiber, vitamins and minerals just like everyone should have. Even cookies can have some healthy ingredients along with their sweetness: whole grains, high protein flours, nuts and eggs, for example.

To prove the concept that gluten-free cooking is attractive to more people than just celiacs, consider the simple Peanut Butter Cookie. Sweet, tender, rich and a little crunchy, it’s a favorite of many who have no intention of eating anything gluten-free.

Butterscotch Bars – Gluten-Free

“Yum!” I heard as I was setting up a photo of the Butterscotch Bars I’d just baked. I turned around to see my husband grabbing a whole handful of them from the pan as he was finishing his first mouthful. He’s usually not so interested in my gluten-free cookies, but these really were outstanding.

Navy Bean Soup — Gluten-Free and Casein-Free

Navy beans are one of our favorites here…well, especially Al’s favorites. He likes them with just about anything…in a salad, as part of a main dish or as a side in a main meal. He likes them in many combinations, but most of all, he likes them in soup.

Pan-Grilled Asparagus, Garlic and Parsley

As fresh asparagus begins to show up in the produce market in abundance, I find many recipes to enjoy it – soups, salads, sides, quiches – you get the idea. The best way to enjoy it, though, is perhaps the simplest – pan-grilled in a little oil (or, if you’re like my husband, in a little butter) until crisp-tender, with simple herbs and maybe a squeeze of lemon just before serving. This is cooking gluten-free, making food everyone will like.

Roast Chicken with Savory Vegetables — Simple, Healthy and Gluten-Free – Yes, Gluten-Free IS Healthy!

We roasted a chicken a few days ago, the way my mother used to make one. She didn’t need to cook for a celiac or gluten-intolerant diet. Her recipe for roast chicken was naturally gluten-free.

Simple. Healthy. Natural. Economical, too. I’m amazed at how much the same food costs if someone else cooks it for me!

It was simple, and it was healthy, and it was gluten-free.

Slow-Cooked Corned Beef Dinner – That’s Gluten-Free As Easy As It Gets!

Many traditional meals have to change somewhat to become gluten-free, but for St. Patrick’s Day, we don’t need to change our favorite meal. Most of the corned beef brisket I’ve found to cook is safe for gluten sensitive people. That doesn’t mean I don’t thoroughly verify the ingredients, but this is one of the easiest meals for someone with celiac disease or gluten intolerance.

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!
