Have you ever wished you could make your own easy gluten-free sandwiches any time you want to? Sometimes it seems really hard because you have to make or buy some sort of gluten-free bread and assemble all of the ingredients for your sandwich. Easy Banana Bread Recipe

This easy banana bread recipe has been a favorite of ours for a long time. We like it every season of the year, and we especially like to have some for gluten-free snacks.

It tastes good alone, but it also is great with a flavored spread like apple butter or pumpkin cream. If I cut regular slices from the loaf like you see in the picture, they are so good to eat plain that we often don’t even think of adding something to them before the whole loaf is gone…especially if I leave it where my husband can see it.

Gluten-Free Diet Menu Plan for the Week of October 28, 2012

Today’s gluten-free diet menu plan starts with Cabbage Rolls. It’s really easy to double the recipe and have plenty for lunches later in the week.

The next day features one of the three 30 minute meals in this week’s menu plan — Sauteed Chicken Breasts complemented by rice and spinach with mushrooms.

I think this is a great meal for when I’m pressed for time. I can actually put this meal on the table in about 20 minutes if I have some cooked rice leftover in the refrigerator.

And, I like this meal even more because, if I’m cooking it for kids, I can…

Chicken Mushroom Rice Bake with Homemade Gluten-free Mushroom Sauce

This old family favorite is made from scratch, even the sauce, so you know that it’s safe for a gluten-free diet. Since the chicken is boneless and skinless, it’s easier to serve and clean up than the bone-in version.

You can use your favorite vegetables in it, but our favorites are either green beans, or peas and carrots, or chopped broccoli. You’ll have a complete meal in one dish with this gluten-free casserole. If you want to make it dairy-free, you can use the oil instead of butter or margarine, and also use a dairy-free milk, or mushroom or vegetable stock instead.

Salads for a Memorial Day Gluten-Free Diet

Holidays can be especially stressful for those of us with conditions causing gluten intolerance or gluten sensitivity because of the difficulties associated with the needs of maintaining a gluten-free diet and environment amid the avalanche of gluten-filled barbecues, parties and cookouts.

And, I’m going to talk about one thing that you and I can do about that but first, I’d like to share what I believe is the true meaning of Memorial Day and what it means….

Crockpot Split Pea Soup with Carrots, Celery, Onion and Ham

I really love split pea soup in my gluten-free diet … It’s high-fiber, has no refined sugar and is highly nutritious. And, my husband likes it even more than I do. He thinks that it tastes great and frequently comes back for seconds.

Actually, this is one of my all-time favorite gluten-free soup recipes. It takes only a minute or two to remove the foreign matter from the bag of split peas. It cooks almost on auto pilot.

It makes 6 to 8 servings with a very small time investment.

Napa Cabbage Slaw with Red Wine Vinaigrette

A salad with napa cabbage has a more tender texture and a milder, sweeter flavor than most types of American cabbage. And, to make it even better, its vitamins and minerals make it a healthy addition to a gluten-free diet.
