Apple Galette, Gluten-Free and Easier than Pie!

Apples and spice go together so well! Just about all they need is a little something to wrap around them while they bake…like some pastry crust. I’ve made a lot of gluten-free apple pies, but none of them were any better than this galette.

Gluten-Free Tamale Pie

Tamale Pie is a traditional Tex-Mex dish that my family and most people I’ve ever served it to rave about. Making a Tamale Pie is pretty easy. You simply put chili in a casserole dish, stir in some cheese and top it with cornmeal mush. Bake it until it’s “bubbly” in the oven, take it out, let it cool a bit and serve.

Shrimp Stir-Fry with Bok Choy, Mushrooms and Spinach

My family loves this meal! Personally, I like to have this gluten-free stir-fry as a low-carb meal. For the rest of the household, rice or gluten-free noodles are optional side dishes – and according to my husband, they are required. The stir-fry works well either way. And I love to serve whole foods to my family.

Gluten-Free Chard – Steamed, Sauteed or Stewed with Soup

We rediscovered chard this summer. We had eaten it before, once every year or two, but I didn’t remember it tasted as good as it has this summer. We’re making up for lost time. I’ve served it every couple of weeks lately.

Oatmeal Raisin Walnut Bars – Gluten-Free

Yesterday I was trying to find a new way to make some of my favorite things. I was contemplating different combinations, varying shapes and textures, flours with more fiber. Gluten-free oatmeal snacks with walnuts instead of pecans. Bars instead of cookies.

Crusty Whole-Grain Cornbread — Gluten-Free

Honey drizzled over warm cornbread…wonderful! Raspberry preserves spread over a another wedge…delicious! During a week of making extra-easy meals, I really enjoyed a simple pan of crusty cornbread. Some of it went with soup. I toasted another wedge in the oven to go with chili and beans. The last piece was pan-grilled to go with eggs for breakfast.

Onions Braised With Parsley

Onions add their sweet, savory flavor to many of the things I cook. They also deserve a spotlight of their own. You can usually find pearl onions year-round in the produce department (or if you want, in the freezer case). Dressed up just a little with butter and parsley, and maybe a little paprika, they’re a great side dish for many meals. You can easily use a substitute for the butter to make the onions casein-free.
