Gluten-Free Applesauce Cake with Cherries and Walnuts

This sweet, dense cake with apples, cherries and nuts – not to mention the raisins and spices that flavor it – has been a holiday favorite of ours as long as I can remember. When I started cooking gluten-free, it was among the first cakes I tried to adapt. My Aunt Mac could probably have told the difference, but this recipe of hers converted very well. In fact, when I bake it for a general crowd, it disappears fast.

Potato Salad with Agave and Bacon Dressing — Gluten-Free

On a hot summer day, a scoop of tangy, creamy, crunchy potato salad makes a great gluten-free side dish.

This versatile standby, dressed up with agave nectar and bacon, complements a barbecue sandwich or a hot fillet of fish or a grilled hot dog equally well. Better yet, it can be prepared earlier in the day, so the kitchen isn’t hot from cooking potatoes.

Pan-Grilled Asparagus, Garlic and Parsley

As fresh asparagus begins to show up in the produce market in abundance, I find many recipes to enjoy it – soups, salads, sides, quiches – you get the idea. The best way to enjoy it, though, is perhaps the simplest – pan-grilled in a little oil (or, if you’re like my husband, in a little butter) until crisp-tender, with simple herbs and maybe a squeeze of lemon just before serving. This is cooking gluten-free, making food everyone will like.
