And, if friends are joining you too, you will want it to be especially good, but without a lot of fuss, even if you do have celiac disease.

My husband and I shared this gluten-free meal with some friends and found it all of those – quick, easy, and not a lot of fuss. I started it cooking and then was able to visit with our friends while it finished and the kale with minced garlic steamed. I thought that it was yummy and I’d bet you will too!

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!

Tilapia Fillets, Broiled, With Portobello Mushrooms and Peppers – Gluten-Free

Broiled Tilapia Fillets with Sauteed Portobello Mushrooms and Peppers for supper — my family said it was one of the best gluten-free dinners ever! We’ve had tilapia a number of times, but this combination really was the best so far.

For my own mental health and general well-being I needed a quick meal that wasn’t loaded with carbs and fat (the quick = mental health, and not being loaded with carbs and fat = general well-being). It’s hard to do that, though, without sacrificing the traditional taste….
