Gluten-Free Diet Menu Plan for the Week of March 16, 2014

This week’s Gluten-Free Diet Menu Plan starts off with a South of the Border chicken entrée that is good enough for guests, with a dessert of flan and a snack to start the week off of Oatmeal Raisin Walnut Bars.

For the next day, which will be St. Patrick’s Day, there is a traditional corned beef dinner which, even though I’m not Irish, I cook at every opportunity.

I’ll try to save enough of it to make the Corned Beef Hash Skillet a couple of days later.

Gluten-Free Diet Menu Plan for the Week of March 9, 2014

The Gluten Free Menu Plan this week includes a variety of gluten free meals which run the gamut from Beef Pot Roast to Chicken Stir-Fry to Fish Fillets. It even has a TexMex Crockpot meal of Green Chili Pulled Pork on Day 5.

Plus, to make this week’s menu plan even better, I have listed 2 tasty, but healthful, treats for any family members who might just have a sweet tooth. So, you’ll find some Walnut Muffins and Oatmeal Spice Cookies in the menu plan, too. (Just in case we all need something to snack on. :-) )

Gluten-Free Diet Menu Plan for the Week of March 2, 2014

My husband, Al, and I are enjoying the sun shining in our windows this afternoon while we’re holding hot mugs of tea and trying to ignore what the thermometer on the deck says.

Since it’s been in the low teens, I’m inspired to find more gluten-free recipes for the oven for this week’s gluten-free menu plan. Not all of this week’s dishes are oven-baked — some are in the slow cooker and some are 30 minute meals on the stove top — but plenty are..

Gluten-Free Baked Polenta with Pasta Sauce and Mozzarella Cheese

Baked polenta is an easy gluten-free recipe that works great as a side with dinner. Plus, I really enjoy it for lunch… Especially since it’s so quick & easy to prepare.

If you have ever had grits – especially Southern-style grits with butter, syrup and bacon – you might recognize a similarity to traditional Italian polenta.

They are both made from ground, dried corn. In fact, some would say they are interchangeable, although polenta is usually a coarser grind than grits and the type of corn used is “flint” corn, making a firmer texture after cooking. If you can’t find polenta where you shop, you can substitute grits in a pinch. Some stores also have cooked polenta in a tube in the dairy or meat case.

Baked polenta fits into a 30 minute meal easily, even if I want to add some of the optional toppings like sautéed onion or mushrooms.

Mustard Dill Sauce with Roasted Sweet Potatoes

Here’s a quick-to-fix recipe that will satisfy even my hungriest snack attack.

This easy gluten-free snack or appetizer can also easily serve as a side dish for a meal, especially a sandwich or a dinner salad. The sweet flavor of the sweet potatoes contrasts well with the spicy tang of mustard and dill in the creamy sauce.

One serving of these nutrition-packed sweets gives me 4 grams of dietary fiber…
