Chicken Mushroom Rice Bake with Homemade Gluten-free Mushroom Sauce

This old family favorite is made from scratch, even the sauce, so you know that it’s safe for a gluten-free diet. Since the chicken is boneless and skinless, it’s easier to serve and clean up than the bone-in version.

You can use your favorite vegetables in it, but our favorites are either green beans, or peas and carrots, or chopped broccoli. You’ll have a complete meal in one dish with this gluten-free casserole. If you want to make it dairy-free, you can use the oil instead of butter or margarine, and also use a dairy-free milk, or mushroom or vegetable stock instead.

Gluten-Free Tamale Pie

Tamale Pie is a traditional Tex-Mex dish that my family and most people I’ve ever served it to rave about. Making a Tamale Pie is pretty easy. You simply put chili in a casserole dish, stir in some cheese and top it with cornmeal mush. Bake it until it’s “bubbly” in the oven, take it out, let it cool a bit and serve.

Lasagna with Spinach, Gluten-Free

To combat winter fatigue, I decided to do some gluten-free cooking.

… In self-defense, I baked some lasagna!

Most people wouldn’t believe that something Italian like Lasagna could be a part of a gluten-free diet. But, it can… it fits right into my living gluten-free plan!

Gluten-Free Condensed Cream of Mushroom Soup for Sauces, Casseroles, and especially Green Bean Casserole!

This gluten-free condensed soup is so easy to make you might want to use it even if you don’t need to have a gluten-free casserole…this tastes good enough you need make no excuses to anyone about its being gluten-free.
