Potato Salad with Agave and Bacon Dressing — Gluten-Free

On a hot summer day, a scoop of tangy, creamy, crunchy potato salad makes a great gluten-free side dish. This versatile standby, dressed up with agave nectar and bacon, complements a barbecue sandwich or a hot fillet of fish or a grilled hot dog equally well. Better yet, it can be prepared earlier in the day, so the kitchen isn’t hot from cooking potatoes.

With a little care, potato salad can be gluten-free without any special substitutes.If you’re new to gluten-free cooking, remember to use mayonnaise that has not been contaminated by a gluten-y knife or spoon.

Crusty Whole-Grain Cornbread — Gluten-Free

Honey drizzled over warm cornbread…wonderful! Raspberry preserves spread over a another wedge…delicious! During a week of making extra-easy meals, I really enjoyed a simple pan of crusty cornbread. Some of it went with soup. I toasted another wedge in the oven to go with chili and beans. The last piece was pan-grilled to go with eggs for breakfast.

Pan-Grilled Asparagus, Garlic and Parsley

As fresh asparagus begins to show up in the produce market in abundance, I find many recipes to enjoy it – soups, salads, sides, quiches – you get the idea. The best way to enjoy it, though, is perhaps the simplest – pan-grilled in a little oil (or, if you’re like my husband, in a little butter) until crisp-tender, with simple herbs and maybe a squeeze of lemon just before serving. This is cooking gluten-free, making food everyone will like.

Green Chili Pulled Pork in the Crockpot, Over Bean Burritos – Gluten-Free

Want to spice up your meal plan without having another pot of chili this week? How about some lean boneless pork loin seasoned with green chilis? That’s good by itself, served like a stew, with maybe a green salad on the side, but you can also fill out the gluten-free meal by serving the pulled pork over some bean burritos. If you like, add a dollop of sour cream or a sprinkle of shredded cheese, and some salsa.

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!

Lasagna with Spinach, Gluten-Free

To combat winter fatigue, I decided to do some gluten-free cooking.

So, today, I baked some true comfort food… I am so tired of snow and ice. They’re part of winter here, but they just go on for too long! This year has been especially intense. So,…

… In self-defense, I baked some lasagna!

Most people wouldn’t believe that something Italian like Lasagna could be a part of a gluten-free diet. But, it can… it fits right into my living gluten-free plan!

“King Arthur Flour Glutenfree Bread Mix” Trial

Bread and butter. Toast. Sandwiches. Some of my old favorites just came back to life! I’m now enjoying them once again.

King Arthur Flour, one of the ingredients of choice for baking from my pre-celiac days, has now proven their exceptional quality once again. This time they’ve come up with a gluten-free bread mix that actually tastes good.

Soft Oatmeal Cookies – Gluten-Free

This batch is softer and chewier than usual since I used corn oil instead of margarine — Al says he likes them better that way. My friend Mary says she likes to keep some oatmeal cookie dough on hand, so that they don’t eat all 5 dozen in 3 days. I like her idea — quite often I’ll do that, too, since the only snack better than an oatmeal cookie is…a WARM oatmeal cookie! My earliest baking memories are of my Oma’s oatmeal cookie recipe.
