Gluten-Free Diet Menu Plan for the Week of March 23, 2014

I started the Gluten-Free Diet Menu Plan this week in the easiest way possible. I took a family request!

Sometimes when I just don’t know where to begin, I need to remember that I don’t always have to come up with the answers – I can ask the rest of the family what they want.

This time the request was for Cabbage Rolls and Blueberry Pie. How could I go wrong with that?

Gluten-Free Diet Menu Plan for the Week of March 16, 2014

This week’s Gluten-Free Diet Menu Plan starts off with a South of the Border chicken entrée that is good enough for guests, with a dessert of flan and a snack to start the week off of Oatmeal Raisin Walnut Bars.

For the next day, which will be St. Patrick’s Day, there is a traditional corned beef dinner which, even though I’m not Irish, I cook at every opportunity.

I’ll try to save enough of it to make the Corned Beef Hash Skillet a couple of days later.

Gluten-Free Diet Menu Plan for the Week of March 9, 2014

The Gluten Free Menu Plan this week includes a variety of gluten free meals which run the gamut from Beef Pot Roast to Chicken Stir-Fry to Fish Fillets. It even has a TexMex Crockpot meal of Green Chili Pulled Pork on Day 5.

Plus, to make this week’s menu plan even better, I have listed 2 tasty, but healthful, treats for any family members who might just have a sweet tooth. So, you’ll find some Walnut Muffins and Oatmeal Spice Cookies in the menu plan, too. (Just in case we all need something to snack on. :-) )

Gluten-Free Diet Menu Plan for the Week of March 2, 2014

My husband, Al, and I are enjoying the sun shining in our windows this afternoon while we’re holding hot mugs of tea and trying to ignore what the thermometer on the deck says.

Since it’s been in the low teens, I’m inspired to find more gluten-free recipes for the oven for this week’s gluten-free menu plan. Not all of this week’s dishes are oven-baked — some are in the slow cooker and some are 30 minute meals on the stove top — but plenty are..

Come join us and let me know what your favorite is.

Gluten Free Avocado, Black Bean and Bacon Omelet

This eye-appealing omelet is topped with bacon and filled with an avocado and black bean combination that’s full of different textures and flavors. It’s easy enough to cook for breakfast, but it would be ideal also for a lunch or even dinner. Most of the time when I cook an omelet for my family, they ask for cheese in it, but no one missed it in this one.

Not only is this nutrient- and protein-packed dish gluten-free, it’s also dairy-free.

The avocado and black bean filling is more like a salad around which the omelet is wrapped. It isn’t the kind of filling that cooks in the omelet. Neither is the bacon cooked in the omelet. I added it as a topper. However, if you want, you can add optional ingredients such as cheese or diced ham while cooking the eggs, although I didn’t add either of these this time.
