Menu Plan for March 5, 2012

My gluten-free menu plan for the week is here, even if it is a little bit late. (I like to start the week on Sunday….) I’m putting my week into order with a menu to simplify my daily routine, help with my shopping and manage my family’s apparent tendency towards our less-healthy old favorites four nights out of seven. Now when we have a comfort food, it will be in the plan!

Apple Galette, Gluten-Free and Easier than Pie!

Apples and spice go together so well! Just about all they need is a little something to wrap around them while they bake…like some pastry crust. I’ve made a lot of gluten-free apple pies, but none of them were any better than this galette.

Gluten-Free Chili with Tomatoes

Chili is a traditional Tex-Mex dish in my home-town of San Antonio. In fact, it’s been cooked and served there since at least the 1700s, often by local women selling bowls full of steaming chili con carne from their carts or wagons in the market squares. It’s basically a gluten-free dish of chili peppers and meat.

There were many different recipes then, but, just as now, they all depended on the chili pepper to make a good pot of chili con carne, “chili with meat.” For someone who is celiac, gluten-intolerant or gluten-sensitive, or for anyone else, there are a multitude of ways to enjoy it. My gluten-free recipe today adds beans, tomatoes and a few other seasonings.

Easy Gluten-Free Beef Cube Steaks in the Crockpot

I really appreciate a gluten-free meal that is quick and easy to prepare. Even when I’m at home, some days I like to have dinner started and simmering away on its own while I work elsewhere. In a crockpot or slow cooker, these Beef Cube Steaks cook on their own without any attention until it’s almost time to eat. Then we have a frugal meal that my husband thinks is awesome, and there’s not too much to clean up.

Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!
