Redskins ‘Skins with Olive Oil and Garlic Salt – Gluten-Free Snacking

Snacks are always popular around my house, sometimes more so than meals! Gluten-free snacks that my husband likes can be especially hard to find, so when we have one that we both like, like these redskins, I take note. Don’t tell him :-) but these are also much healthier than many of his favorite snacks. I recently served them with some carrot and celery sticks on the side – he was well on his way to a whole day’s worth of veggies before he even got to dinner!

Cod Fillets Sauteed with Garlic, Onions and Peppers, Gluten-Free, Casein-Free

Looking for a healthy dish with lots of flavor that’s also quick and easy for a weeknight supper? One serving (including a little over 5 ounces uncooked weight of the fish) has only about 188 calories and 28 grams of protein. Cod, a mild-flavored deep sea fish, is easily found in many supermarkets. Easy to cook in a variety of ways, cod fillets are among my family’s favorites for taste and ease of preparation.

Beef Hamburger Steak With Sauteed Summer Squash and Refried Beans

The other night I needed a fast meal — more than that, I needed to put more fiber in front of my hubby that day…It was good enough together that he didn’t even go get a bun to have with his hamburger steak!
