Chicken Stir-Fry with Broccoli and Peppers
My hubby liked this particular combination so much that he rated it “one of the best ever!” …Even though the directions seem long, this is not a long meal to cook. Since it is that quick, I thought it would be a good summer weeknight dinner….

Gluten-Free Quesadillas
I grew up in south Texas where Tex Mex was a major food group. If you grew up under similar circumstances, you will definitely appreciate what I’m talking about.
In fact, I never had a grilled cheese sandwich until I was out of high school… but I definitely had lots of quesadillas.

Fish Fillets Fried with Cornflake Crumb Breading (Gluten-Free)
We’ve had gluten-free fish breaded a number of different ways, but last night I cooked them with cornflake crumbs. We thought it had the best all-around flavor and texture of any I’ve cooked. You could make your own cornflake crumbs in a food processor with gluten-free cornflakes, but this time I used ready-made Southern Homestyle Corn Flake Crumbs distributed by The SoyNut Butter Company. We added some potatoes and a serving of green and wax beans for one of our favorite gluten-free meals.

New England Clam Chowder (Gluten-Free)
Not too rich, but creamy and filling, a bowl of this gluten-free New England Clam Chowder makes a lunch to last till dinner, or a cup of it with a salad will do the same.
